Two weeks ago, I mentioned that I was beginning to harvest blackberries, and while the harvest was small, the quality was exceptional.
Well, to give you an idea of exactly how small, I had been hoping to gather enough berries to bake a pie. Normally, I would use four cups of berries. After two weeks (with, admittedly, some of the berries eaten fresh), I had only three cups to work with.
So I used a smaller pie pan and made a smaller pie. As you can see in this photo, the filling isn't exactly exuberantly abundant, but the pie tastes wonderful.
I'm still harvesting berries, though the bulk of the harvest is now over. The remaining berries will likely be eaten fresh, so this little pie will be it for the year. (I still have some berries in the freezer from the bountiful 2012 harvest, so I can make some pies later in the year; just not from fresh berries.)
Hopefully, we'll finally get a mild winter that won't kill the canes that have emerged this year, so that next year we'll get more than one little pie from the blackberries.
