About two weeks ago, I bought a large, plastic carton of kiwi fruit at Costco, and despite eating some of the fruit and giving some of the fruit away, I still had yesterday seven kiwis needing to be consumed fairly soon. So I did what I would do with any other large quantity of fruit — I baked a pie.
As I've mentioned in the past, I always have some homemade pie dough in the freezer. But I'd never made a pie out of kiwi fruit before.
I proceeded to put together a filling based on what I would do for a berry pie, just adding sugar, as well as tapioca and a little flour to get the filling to set. I ended up deciding to add an entire cup of sugar because I was uncertain how sweet the pie would be, and I also added a tablespoon or so of lemon zest because I suspected the kiwi flavor might be a bit oppressive without the brightening of a little citrus.
I probably could have used another two kiwi fruit to fill up the pie tin better, but as you can see from this photo, the pie came out of the oven looking wonderful. And how did it taste?
